Blessed with around 300 days of sunshine a year, the red peppers of Macedonia are harvested in late summer when they are at their peak. Chargrilled for a smoky flavour, they are then blended with only three other ingredients - roasted aubergines, oil and salt, to create the traditional spread, described in Macedonia as ‘Baltic caviar’. This mainstay of Baltic cuisine can be used to elevate goat’s cheese, enjoyed spread on toast, added to burritos or eggs, cheese or as a tasty accompaniment to any meal.
